Ingredients

3 Tbs Olive oil, extra virgin

1 T Lemon juice

1 tsp Crushed garlic

1/2 tsp Oregano, dried

1/4 tsp Sea salt

1/4 tsp Freshly ground black pepper

3 Tomatoes

1/4 Red onion

1/2 Cucumber

4 oz Feta cheese

16 Kalamata olives

Optional ingredients::

Lettuce

Artichoke hearts

Balsamic vinegar

Capers

Fresh basil

Description

Greek salad, or horiatiki, is a rough country salad which can be served as a side dish or as a light meal with some crusty bread. From website mediterrasian.com, 2/7/08. Enhanced with lettuce, artichoke hearts, balsamic vinegar, capers and fresh basil on 6/10/09.

Directions

Place the olive oil, lemon juice, garlic, salt, pepper and oregano in a small jar with a screw-top lid; shake to combine.

Chop the tomatoes into bite-size pieces and place in a large bowl.

Slice the red onion into thin rings and place in the bowl.

Slice the cucumber into quarter-slices and place in the bowl.

Slice the kalamata olives in half and place in the bowl.

Cut the feta cheese into small cubes or use crumbled feta and place in the bowl.

Pour the dressing over the salad and toss gently to combine just before serving. Garnish with a little freshly ground black pepper.
